Good afternoon everyone!

How is the Christmas planning going? I have many ideas in mind that I hope to post little by little.

Today I bring a recipe using an ingredient that is being used more and more in our kitchens: avocados. They are high in healthy fats and a good source of fiber, vitamins, and minerals. I personally love it. You can make so many recipes with it, even avocado chips! - one day I will share his recipe with you. This time I have mixed two of my favourite foods - traditional hummus and avocado - so I ended up with avocado hummus! Perfect as an appetizer for your Christmas table, along with some canapés, olives, cheese, charcuterie, and so on.

INGREDIENTS - 540 mL (1 can) unsalted chick peas, well drained - 2 medium ripe avocados - 3 tbsp extra virgin olive oil, plus 1 tbsp for serving - 1 1/2 tbsp tahini - Half a lemon juice - 1 clove garlic, peeled - A pinch of salt and pepper - A pinch of paprika DIRECTIONS - Rinse chickpeas and add them to the food processor. Add also the olive oil, tahini, lemon juice, garlic, and a pinch of salt and pepper to it. Process for 3 minutes or until it is smooth.

- Peel avocados and add them to the food processor. Process for 3 minutes until smooth and creamy. Scrape the sides and process for another minute if necessary.

- Serve drizzled with some olive oil and sprinkle with some paprika. Serve with pita bread, optional. You can also use bread sticks if desired.

This recipe takes 10 minutes to make and it is perfect to share with the family and friends. It is vegetarian, vegan, and gluten-free :)

I hope you make and love this avocado hummus recipe as much as I do!

Love,

Miriam
