Hello everyone!
I hope you all are doing well! Here in Toronto is freezing, fall was very mild and all of sudden we get -16ºC! I still love the cold, and I can't wait for winter to come!
As some of you know, I was born in Spain and so I grew with its traditions. In the weekends and in summer time, it is very common to eat the vermut before lunch. Vermouth is an aromatized, fortified wine flavoured with different herbs and spices. This drink is usually accompanied by olives, cockles, pickles, razor clams, chips, and soft drinks. This summer I went back home to spend time with my family and so I decided to make homemade potato chips for the vermut. This recipe could not be more simple and easy to make, keep reading to find out how.

INGREDIENTS
- 4 medium potatoes, sliced
- Salt and pepper
- 1 cup (250 ml.) of extra virgin olive oil
DIRECTIONS
- Peel the potatoes (optional), drain and rinse them.
- Pour the oil in a pan, heat to 180ºC (365ºF), add the potato slices little by little. When they start turning golden, remove and drain on paper towel. If you do not have a frier or a thermometer, you can add a slice in the pan and when it turns golden then you will know the oil is hot enough to fry your chips. Please, be careful not to burn yourself with the oil, or to contaminate with water since it will splash.
- Season with salt and pepper before they get cold.

It is this simple, yes! And a million times healthier than buying them. I a real supporter of homemade food and I highly dislike buying food that only contains processed ingredients that do nothing but harm your body. I encourage everyone to cook more home, and reduce buying food outside. There are no excuses, these chips take no longer that 15 minutes. Some healthy dishes, salads, pasta, fish, can also be cooked in 30 minutes. So invest 30 minutes of your time to cook, and your health will appreciate it :)
Have a wonderful day and stay warm!
Miriam
