Halloween Stuffed Peppers

Hello Spooky readers!
Halloween is around the corner so I would like to share with you a main course: Halloween Stuffed Peppers! These are really easy to make and a funny way to present your plate if you have people coming over your place, or to encourage the little ones to eat their veggies.
'Oh, but I do not have peppers, I cannot make this recipe.' Yes, you can! You can substitute them for Queen Heirlom tomatoes, Cheese pumpkins, Rouge Vif d'Etampes pumpkins, etc.

Read below to know how it is made.
Ingredients
2 orange or red peppers
1 cup of any type of rice
2 cups of water, and some more
1/2 cup of onion
1/2 cup of zucchini
1/2 cup of mushrooms
10 grape tomatoes
1 clove of garlic
Fresh oregano, thyme and mint
Salt and pepper
1/2 cup of mozzarella cheese
Directions
1. Preheat the oven to 180ºC.
2. Pour 2 cups of water in a pot to boil and then add the rice. Let it cook for 15 minutes, this may vary depending on the type of rice you use. I used multi-grain Chinese rice.
3. Wash the peppers, cut the top, remove the seeds and wash again. With a sharp knife - Careful! Do not cut yourself! - draw a scary face on the peppers and then cut it off.

4. In another pot, pour enough water to cover the peppers, boil it and add the peppers. Let them boil for 5 minutes. Let it cool.
5. Cut all the vegetables, add the garlic and onion to a pan, then the zucchini. Once those are sautéed, add the mushrooms. Stir.
6. Add the salt, pepper and the rest of the spices to the vegetables stir.

7. Mix the rice with the vegetables, and add the cheese to the mix.

8. Stuff the peppers with the rice and vegetables mix.
9. Bake the peppers for 5 minutes. Carefully serve them.
