Fluffy Pancakes

Good morning everyone!
I hope you are doing well. How many days have you woken up craving something sweet like crêpes, waffles or pancakes? Well, I have a lot of those craving-days, but whoever discover raw materials, ingredients and appliances, made it very easy for us all. Making pancakes only takes 20 minutes of your time, and once you try to make them yourself, you will never want to buy them anywhere else! The best thing? That you can accompany it with infinity options: fruit, savoury ingredients, nut butter, chocolate chips, chocolate spread, whipped cream, avocado... Once I even stuffed the pancakes with cookie dough, and oh my god! They were sooooo tasty!

INGREDIENTS
- 3/4 cup (180 ml) milk
- 2 tbsp unsalted butter, melted
- 1 cup (125 g) whole wheat flour
- 1 tbsp cane sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 egg
- 1 tsp coconut oil
- 100% maple syrup
- Toppings (butter, fruit, chocolate...)
DIRECTIONS
- Combine the dry ingredients: whole wheat flour, cane sugar, baking powder, and baking soda in a large mixing bowl.🥣
- Whisk the egg and melted butter in a bowl, add milk and mix again (wet ingredients).
- Pour the dry-ingredients mixture into the wet ingredients, whisk until lumps are gone.
- Heat a pan over medium heat, and add the coconut oil. Once melted clean the pan with a tissue. Pour 1/4 cup of batter onto the pan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until it turns golden brown on the other side.

- Serve the pancakes with whichever toppings you prefer. In this case, I added a fruit, chocolate topping, and I drizzled a large amount of 100% maple syrup. I simply love it!
