Chocolate and Walnut Cookies Stuffed with Nutella

Hello everyone! I hope you are doing well!
Today, I wanted to share with you all this chocolate and walnut cookies stuffed with Nutella. My mum used to bake this cookies for us, and so now I am the one that makes them all the time. They are soft cookies with crunchy edges. The chocolate and walnuts give it a nice texture, especially if you eat them while they are still warm, since the chocolate melts in your mouth. The Nutella inside of them, makes you feel like you are in heaven. I prefer making cookies myself, rather than buying them. This way I know my cookies have high quality ingredients, and are free of preservatives, processed ingredients and chemicals. You only need 30 minutes of your time to make them (if the butter is at room temperature). What are you waiting for?

INGREDIENTS
- 150 g 70% unsweetened dark chocolate chips
- 300 g unbleached all-purpose flour
- 120 g unsalted butter, at room temperature
- 110 g brown sugar
- 110 g cane sugar
- 100 g walnuts
- 1 egg
- 1 tsp baking powder
- 15 tsp chocolate and hazelnut spread, such as Nutella
DIRECTIONS
- Preheat oven to 180ºC (355ºF).
- In a medium bowl add the butter, cane and brown sugar. Beat until it is creamy.


- In a small bowl beat the egg, and add it to the medium bowl. Sift the flour and yeast to the bowl. Mix well.


- Chop the walnuts and add them to the mix. Add also the chocolate chips. Stir. Cover it with transparent foil and chill the dough for 1 hour. It will solidify the fat in the cookies and concentrate the flavour. This step is optional, though.



- In an oven tray, put baking paper. Grab a tablespoon of cookie dough, flatten it and place a teaspoon of Nutella on top, then cover it with the edges. Roll into a ball and pop onto the tray. Repeat this process, leaving space between the balls, since the dough will spread. I only stuffed half of my cookie dough balls.






- Bake cookies for 10 to 15 minutes, or until the edges are lightly browned. Let them cool.


TIPS
- You can substitute the walnuts for any other nuts, and so the dark chocolate for milk or white chocolate.
- You get 35 to 40 cookies, depending on the size. If you make them smaller you will get more.
So as you can see, it is a simple recipe. The small ones in the house can also jump and help. They will have fun making them, so eventually they will see that cooking is fun. Why not to encourage the small ones to help with the tasks at home, like cooking? :)
